I LOVE coconut milk. I love it almost as much as I love coconut oil, and you know I luuuuv coconut oil.
But a good coconut milk is versatile, always creamy, and delicious. It tastes good without having to add the extras (vanilla, honey, maple syrup, dates, stevia, or other sweetners).
I’m looking at you sweet flax milk.
Since we’ve been milk-free and dairy-free for years now, due to allergies and DJ’s biomedical treatments, cow’s milk is out.
So is fermented goat’s milk (it was a phase), milk kefir, and raw camel’s milk. We never tried camel’s milk, but it’s often suggested as a natural treatment for autism.

But its not about the camel today.
Noooo, it’s all about coconut flakes and cutting the time it takes to make coconut milk by 95% — without losing any of the health benefits.

- 1 cup of coconut flakes
- 3 cups of hot water
You’ll also want to get a:
- high speed blender
- strainer
- medium sized bowl
- 24 ounce sealable bottle
You can use any kind of coconut flakes…
I’m using Bob’s Mill’s Because I had some leftover from another recipe, but any unsweetened, organic, dried, no added sugar coconut flakes will work. You can always add sweetener to your milk when it’s finished.
Add the coconut flakes to your blender and blend until it looks like a fine powder.
Coconut Milk Benefits
Fresh coconut milk (8oz) has about 60 calories is is filled with vitamins, minerals, and fatty acids including lauric acid.
Lauric acid is converted into monolaurin in the body. Monolaurin is a compound that has “antibacterial and antiviral properties.”1 It’s also found in breast milk.
New research suggests that coconut milk may help protect the body from infection because of its high concentration of lauric acid.1

- 1 cup coconut flakes
- 3 cups hot water
- Blend on high speed for up to 1 minute, or until the coconut flakes looks like clumpy fine powder.
- Strain the milk through your strainer until no coconut flakes or clumps remain.
- Pour your coconut milk into sealable jar or container.
- If you're using a food processor, pulse for up to 1 minute, or until the flakes become a fine powder.
- Pour hot water into your blender with the coconut powder.
- Blend on high speed for up to 2 minutes or until smooth.
- Strain any remaining coconut flakes or clumps from the milk. You may need to repeat this a couple of times; or until the milk is clear.
- Pour it into your sealable jar or container.
- This coconut will last in your refrigerator for up to 2 weeks.
- Store your coconut milk in the refrigerator for up to 2 weeks.
